  • Yield: 12 rolls 1x

Description

These Sweet Peanut Butter and Jelly Rolls are a delightful twist on a classic comfort food combination. Soft, pillowy rolls are swirled with a creamy peanut butter, strawberry jelly, and then baked to golden perfection. You’ll love these sweet rolls for breakfast, brunch, or a special treat.

Ingredients

Scale

3 1/2 cups all-purpose flour
1/4 cup sugar
1/2 teaspoon salt
1 pkg. active dry yeast
1 cup milk
1/4 cup butter
1 egg

Filling:
1 cup peanut butter
1 cup jelly

Glaze:
1 1/2 cup powdered sugar
34 Tbs milk
1 tsp vanilla

Instructions

1. In a large bowl, whisk together flour, sugar, and salt. Set aside.

2. Warm milk and butter until melted, then let cool to 110 degrees, and add yeast to proof.

3. Add the milk mixture and egg to the flour mix.

4. Stir in more flour, 1/2 cup at a time, until the dough comes together.

5. Knead the dough on a floured surface until smooth and elastic (about 5 minutes).

6. Place dough in a greased bowl, cover, and let rise in a warm spot until doubled.

7. Roll out dough into a 12″x15″ rectangle.

8. Spread peanut butter, then jelly over the dough.

9. Roll up the dough, trim edges, and cut into 12 rolls.

10. Place rolls in a greased pan, cover, and let rise again.

11. Bake at 350 until golden (about 20-25 minutes).

12. Mix glaze ingredients, adding milk to reach your desired consistency.

13. Glaze the rolls once cooled slightly and serve.

Notes

For extra fluffy rolls, be sure to let the dough rise in a warm environment.

Don’t over-knead the dough, as this can make the rolls tough.

Allow the rolls to cool slightly before glazing.

For a glossy finish, brush the rolls with an egg wash before baking.

If your rolls are browning too quickly, tent them with foil during the last few minutes of baking.
