Ingredients
2 c. pecans, finely chopped
1 1/2 c. self-rising flour
1 c. granulated sugar
1 c. brown sugar
1 c. vegetable oil
4 large eggs, beaten
1 tsp. vanilla extract
1/4 tsp. salt
Instructions
Preheat the oven to 350F (175C). Grease a 9×13-inch baking dish.
In a large bowl, combine granulated sugar, brown sugar, beaten eggs, and vegetable oil until smooth.
Gradually stir in the self-rising flour and salt until just combined.
Mix in vanilla extract, then fold in the chopped pecans.
Pour the batter into the prepared baking dish.
Bake for 3035 minutes, or until a toothpick inserted in the center comes out mostly clean.
Let the pecanbread cool in the pan for at least 15 minutes before slicing and serving.
