Ingredient Notes

  • Sausage – Use your favorite type of sausage! Italian sausage, bratwurst, or even chicken sausage would work wonderfully.
  • Potatoes – Any variety of potato will do, but aim for ones that hold their shape well when roasted, like Yukon Gold or red potatoes.
  • Bell Peppers – A mix of colors adds visual interest and a range of flavors, but use whatever colors you enjoy and have on hand.
  • Olive Oil – Good quality olive oil is essential for roasting and adds a richness to the dish.

Add-ins and Substitutions

  • Onions: Add sliced onions along with the peppers for extra depth of flavor.
  • Seasoning: Feel free to change up the seasoning! Garlic powder, onion powder, or a dash of red pepper flakes can all add tasty variety.

FAQs

  • Can I use frozen vegetables?

I don’t recommend using frozen vegetables in this recipe without thawing them first, as they tend to release excess moisture and may not roast as well.

  • Can I make this ahead of time?

You can prep the potatoes, peppers, and sausage ahead of time by chopping and storing them in the refrigerator, ready to be tossed with oil and spices before baking.

  • How do I store leftovers?

Leftovers can be stored in an airtight container in the refrigerator for up to 3–4 days. Reheat gently in the oven or microwave.

Serving Suggestions

  • Serve with a fresh green salad with a simple vinaigrette.
  • Add a dollop of creamy sour cream or plain yogurt.
  • Offer crusty bread for soaking up the flavorful juices.
  • Sprinkle with fresh herbs like parsley or chives.

Make This Recipe in Advance

You can prep your ingredients up to 24 hours in advance by chopping the potatoes and peppers and storing them with the sausage in the refrigerator. Toss with the oil and spices just before baking.
