Zucchini Bread Waffles

  • Total Time: 25 minutes
  • Yield: 4-6 servings 1x

Description

These Zucchini Bread Waffles are a delightful twist on a beloved classic, offering all the moist, tender goodness of zucchini bread with the satisfying crunch of a perfectly cooked waffle. They are perfect for a special breakfast, a delightful brunch treat, or even a unique dessert.

Ingredients

Scale

1 1/2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon kosher salt
1/4 cup packed light brown sugar
2 large eggs
1 cup whole milk
1/4 cup (1/2 stick) unsalted butter, melted and slightly cooled
1 teaspoon pure vanilla extract
1 1/2 cups finely grated fresh zucchini (about 1 medium zucchini)
Maple syrup for serving

Instructions

Grate the zucchini and wring out excess moisture using a clean kitchen towel to prevent soggy waffles.

Preheat your waffle iron as per the manufacturer’s directions.

In a large bowl, combine flour, baking powder, cinnamon, nutmeg, and salt.

In a separate medium bowl, whisk together eggs, milk, melted butter, brown sugar, and vanilla until smooth.

Add the wet ingredients to the dry ingredients and gently fold with a spatula until just combined.

Fold in the squeezed, grated zucchini. Avoid overmixing; a few lumps are fine.

Lightly grease your preheated waffle iron.

Pour about 1/2 cup of batter onto the center of the iron and close the lid.

Cook for 4 to 6 minutes, or until deeply golden brown and crisp, and the steam subsides.

Transfer cooked waffles to a wire rack to keep them crisp.

Serve warm with butter and maple syrup.

Notes

Be sure to squeeze out as much excess liquid from the grated zucchini as possible before adding it to the batter. This prevents soggy waffles and ensures a better texture.

For consistently golden waffles, make sure your waffle iron is fully preheated before you start cooking.

Pour only enough batter to fill the waffle iron without overflowing. Too much batter can lead to uneven cooking and a messy cleanup.

As you finish each waffle, you can keep them warm in a single layer on a baking sheet in a low oven (around 200°F/95°C) while you cook the rest.
