Description

This Zesty Spicy Garlic Shrimp Pasta is a flavor explosion that’s ready in under 30 minutes! Tender shrimp are coated in a vibrant, zesty sauce with a touch of heat, then tossed with perfectly cooked pasta.


Ingredients

lb (300g) raw prawns shrimp thawed, peeled, deveined
lb (300g) linguine or spaghetti
1 lb (500g) fresh tomatoes ~4 large, ripe, diced
1 cup fresh parsley finely chopped, about a handful
1 tablespoon tomato paste
2 cloves garlic minced
½ tablespoon dried chilli flakes or adjust to taste
1 teaspoon brown sugar or white sugar
salt and pepper to taste
2 tablespoon olive oil optional: extra to serve
Prawn (shrimp) seasoning
1 glove garlic minced
¼ teaspoon salt
¼ teaspoon black pepper
1 teaspoon paprika sweet or smokey
1 tablespoon olive oil
To serve (optional)
fresh parsley finely chopped
chilli flakes
extra virgin olive oil
parmesan cheese


Instructions

1. Toss shrimp with prawn seasoning ingredients. Set aside.

2. Cook linguine according to package directions, with salted water, until al dente.

3. Sear seasoned shrimp in a pan over high heat for 1 minute per side. Remove and set aside.

4. In the same pan, add olive oil, garlic, and tomato paste. Cook until fragrant and garlic is lightly golden. Add tomatoes, chili flakes, and sugar. Season with salt and pepper. Simmer with the lid on for about 10 minutes.

5. When pasta is ready, return shrimp to the pan with parsley. Add drained pasta and cup pasta water.

6. Toss pasta with sauce and serve with olive oil, parsley, parmesan cheese, and chili flakes, if desired.

Notes

Don’t Overcook the Shrimp: Shrimp cooks very quickly, so keep a close eye on it. Cook it just until it turns pink and opaque.

Use Fresh Ingredients: The best flavor comes from fresh garlic, lemon, and parsley.

Adjust the Spice Level: Control the heat by adjusting the amount of red pepper flakes.

Salt the Pasta Water: Generously salt the pasta water. It seasons the pasta from the inside out. This makes a big difference in the final flavor.

Reserve Pasta Water: Saving some of the pasta water is critical. It helps the pasta and sauce meld, and it can be used to thin the sauce if needed.
