1 cup mayo
⅔ cup sour cream
3 tablespoons fresh lime juice
2 tablespoons taco seasoning
16 ounce bag tri-color coleslaw mix
1 diced red bell pepper
1½ cup grape tomatoes halved
1 (15.25 ounce) can black beans drained and rinsed
1½ cups grilled or blackened corn
1 jalapeno seeded and minced
½ cup chopped fresh cilantro
kosher salt and fresh ground black pepper


Instructions

In a small bowl, whisk together the mayonnaise, sour cream, fresh lime juice, and taco seasoning until smooth.

In a large serving bowl, combine the tri-color coleslaw mix, diced red pepper, halved grape tomatoes, rinsed black beans, grilled corn, minced jalapeno, and chopped cilantro.

Pour the dressing over the coleslaw mixture and gently stir until everything is evenly coated. Season with a pinch of kosher salt and black pepper to taste.

Cover the bowl and refrigerate for 30 minutes before serving to allow the flavors to meld.

Notes

The key to a great slaw is in the preparation of the vegetables. Aim for thin, uniform shreds for the best texture and for the dressing to coat everything evenly. A mandoline slicer can be a great help here, but a sharp knife works wonderfully too.

Always use fresh lime juice for the dressing. Bottled juice simply doesn’t have the same vibrant, zesty punch.

Before serving, give your slaw a good taste. Does it need more salt? A bit more lime for tang? Don’t be afraid to adjust the seasonings to suit your preference.

While you want everything coated, over-tossing can bruise the vegetables and make them watery. Gentle tossing is all that’s needed.
