Ingredients
8 oz linguine pasta
1/4 cup extra-virgin olive oil
2 cloves garlic, finely minced
Zest of 1 large lemon
2 tablespoons fresh lemon juice
1/2 cup fresh basil leaves, sliced into thin ribbons
1/4 cup freshly grated Parmesan cheese
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
Instructions
1. Boil salted water and cook linguine until al dente. Save 1/4 cup pasta water, then drain linguine.
2. Put the hot linguine back into the pot or a large bowl.
3. Add olive oil, minced garlic, lemon zest, and lemon juice to the pasta.
4. Add the reserved pasta water and toss well to make a smooth sauce that coats the linguine.
5. Gently mix in the basil ribbons and Parmesan cheese. Season with salt and pepper.
6. Serve warm or at room temperature, perfect for lunchboxes too.
Notes
Don’t Overcook the Pasta: Aim for pasta that is tender but still has a slight bite. It will continue to cook slightly in the sauce.
