4 thick slices of high-quality rustic sourdough or artisan bread
6 ounces soft, spreadable goat cheese (chèvre), at room temperature
1 tablespoon heavy cream or milk (to whip the cheese)
68 fresh ripe figs (Black Mission or Brown Turkey work well), stems removed and sliced thinly
2 tablespoons high-quality honey (wildflower or orange blossom)
1 cup fresh baby arugula, washed and dried
1 tablespoon extra-virgin olive oil
A pinch of flaky sea salt (like Maldon)
Freshly ground black pepper


Instructions

1. Whip the goat cheese with heavy cream until it’s light, fluffy, and easy to spread. Set it aside.

2. Toast the artisan bread slices until they are deeply golden brown and slightly charred, or very crisp in a toaster.

3. While the bread is still a little warm, spread a thick layer of the whipped goat cheese over each slice, reaching the edges.

4. Gently toss the baby arugula with olive oil and a pinch of salt in a small bowl.

5. Place a small handful of the dressed arugula on top of the goat cheese on each toast.

6. Arrange the sliced fresh figs neatly over the arugula, overlapping them slightly.

7. Drizzle the honey over the figs and goat cheese.

8. Finish each toast with a sprinkle of flaky sea salt and some freshly ground black pepper. Serve right away while the toast is still crisp.

Notes

Don’t Overmix: Be careful not to overmix the goat cheese, as it can become too loose. Whip until just combined and airy.

The Bread Matters: Choose a bread that has some substance. Thin, flimsy bread will get soggy quickly. Sourdough or a hearty baguette are excellent choices.

Fig Freshness: Use the freshest figs you can find for the best flavor and texture. If they are slightly bruised, just cut away the bad parts.

Balsamic Glaze Consistency: If your balsamic glaze is too thick, you can thin it with a tiny bit of water or balsamic vinegar. If it’s too thin, let it simmer a bit longer until it reaches your desired consistency.
