Ingredients
1 pound sweet potato, peeled and cubed (about 4 small sweet potatoes)
2 tablespoons olive oil
salt, to taste
1 pinch pepper
1 pinch paprika, or oregano
1 pinch garlic powder
1 pound lean ground beef, or turkey
1/2 yellow onion, finely diced
3 cloves garlic, minced
salt, to taste
1/4 teaspoon pepper
1/2 teaspoon chili powder, or paprika
1 tomato, sliced
1/4 cucumber, cut in half
1 slice onion, one ring
1 jalapeño, seeded
salt , to taste
1/4 cup cheddar cheese, grated (or any cheese of choice)
guacamole, for serving (optional)
sour cream or spicy mayo, for serving (optional)
Romaine lettuce, thinly sliced
Instructions
Preheat your oven to 425F (220C) and line a baking sheet with parchment paper.
In a bowl, toss the peeled and cubed sweet potato with olive oil. Season with salt, pepper, paprika, and garlic powder.
Spread the seasoned sweet potatoes evenly on the prepared baking sheet.
Bake for 30 to 40 minutes, flipping halfway through, until fork-tender. Alternatively, air-fry at 390F (200C) for 17 minutes, tossing halfway.
Brown the ground meat in a pan, breaking it into small pieces. Cook until all liquid has evaporated and the meat begins to brown.
Reduce heat, add diced onion, minced garlic, salt, pepper, and chili powder. Cook until onions are softened.
Finely chop or dice the tomato, cucumber, onion, and jalapeo. Season with salt and stir.
Divide the sweet potatoes, ground meat, cheese, and chopped vegetables evenly among four bowls.
Top with optional guacamole, sour cream, and lettuce as desired.
Notes
Ensure your sweet potato cubes are cut to a similar size for even cooking. Avoid overcrowding the baking sheet, as this can steam the potatoes instead of roasting them, which will prevent them from getting those lovely caramelized edges.
You can easily check if the sweet potatoes are ready by piercing a cube with a fork; it should slide in with little resistance.
For the brightest salsa flavors, prepare it just before assembling your bowls. Don’t add salt until you’re ready to mix it all together.
The amount of water needed for the avocado-lime crema can vary depending on the ripeness and size of your avocado. Add it a little at a time until you achieve a pourable yet creamy consistency.
