Description
This velvety butternut squash soup is wonderfully smooth, subtly sweet, and infused with the comforting aromas of autumn. It’s the perfect way to nourish yourself on a crisp day, offering a delightful balance of creamy richness and earthy flavor.
Ingredients
1 large butternut squash (about 3 lbs), peeled, seeded, and cubed
1 medium yellow onion, chopped
2 carrots, peeled and chopped
4 cloves garlic, minced
3 tbsp unsalted butter
4 cups vegetable broth
1/2 cup heavy cream
1/4 tsp ground nutmeg
1/2 tsp dried thyme
Salt and black pepper to taste
Instructions
Begin by melting butter in a large pot over medium heat. Add the onion and carrots, sauting for about 5 minutes until they become tender. Next, stir in the garlic for a minute until it smells lovely. Then, add the butternut squash, thyme, nutmeg, salt, pepper, and vegetable broth, bringing it to a boil. Lower the heat, cover the pot, and let it simmer for 20 to 25 minutes until the squash is easily pierced with a fork. Take the pot off the heat and use an immersion blender to make the soup perfectly smooth. Finally, stir in the heavy cream and gently simmer for another 3 to 5 minutes, tasting and adjusting the seasonings before serving your warm soup.
Notes
Try to cut your butternut squash into roughly even-sized cubes. This helps ensure that everything cooks at the same rate, leading to a uniformly tender soup.
Don’t rush the sautéing of the onion and carrots. Allowing them to soften and slightly caramelize builds a wonderful depth of flavor that will carry through the entire soup.
For the smoothest possible soup, take your time with the immersion blender. Move it around the pot to catch all the bits, ensuring no lumps remain.
After adding the cream, a gentle simmer is all that’s needed. Over-boiling can sometimes cause dairy to separate or alter its texture, so keep the heat low and watch it closely.
While you season the soup before simmering, always taste and adjust salt and pepper at the very end. The flavors will have melded and concentrated, so you might find you need a little more to bring everything into perfect balance.
