  • 1 cup baby spinach, finely chopped
  • 1/2 cup whole-milk plain strained (Greek-style) yogurt
  • 1/2 teaspoon salt-free garlic-and-herb seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 4 (10-inch) whole-wheat tortillas
  • 1 1/3 cups matchstick carrots
  • 1 1/3 cups alfalfa sprouts
  • 3 medium plum tomatoes, seeded and thinly sliced
  • 1 small yellow bell pepper, thinly sliced
  • 8 ounces thinly sliced lower-sodium deli oven-roasted turkey breast

Instructions

Step 1: Whip the Spread
In a medium bowl, combine the reduced-fat cream cheese, finely chopped spinach, Greek-style yogurt, garlic-and-herb seasoning, salt, and pepper. Use an electric mixer on medium speed for about 30 seconds until the mixture is light, smooth, and fully incorporated.

Step 2: Layer the Fillings
Lay the whole-wheat tortillas flat on a clean work surface. Spread a heaping 1/4 cup of the cream cheese mixture over each tortilla, leaving a small margin at the edges. Evenly distribute the matchstick carrots, alfalfa sprouts, seeded plum tomatoes, and yellow bell pepper slices across the spread. Top each with 2 ounces of the thinly sliced turkey breast to help anchor the vegetables.

Step 3: Roll and Chill
Roll each tortilla up as tightly as possible to form a log. Wrap each log individually in aluminum foil or plastic wrap and refrigerate for at least 30 minutes.

Step 4: Slice and Serve
Once chilled and firm, remove the foil. Using a sharp serrated knife, slice each log crosswise into 8 even pieces, roughly 1 1/4 inches thick. Serve immediately or keep chilled.

Notes
