This Tortellini Caprese Salad Delight is a vibrant and refreshing dish, combining the comforting flavors of cheese tortellini with the classic Caprese pairing of ripe tomatoes, fresh mozzarella, and aromatic basil. The creamy cheese tortellini tossed in a light, flavorful dressing makes it a perfect dish for a summer lunch or a light dinner.
Ingredients
20 oz cheese tortellini, uncooked, approximately 5 cups uncooked
10 oz. cherry tomatoes, halved
8 oz. Mozzarella pearls
1 cup chopped spinach
¼ – ½ cup chopped basil
½ cup extra virgin olive oil
2 Tbsp balsamic vinegar
3–4 garlic cloves, minced
¾ tsp Italian seasoning
½ tsp each: salt and pepper
Balsamic glaze, optional
Instructions
1. Cook the tortellini as directed on the package. Prepare and chop all other ingredients.
2. Once the tortellini is cooked al dente, drain the water, then rinse with cold water briefly to cool.
3. Add the tortellini to a bowl. Add the spinach, tomatoes, mozzarella, basil, and garlic.
4. Pour over olive oil, balsamic vinegar, Italian seasoning, salt, and pepper. Toss well to combine.
5. Chill until ready to serve. Before serving, toss again. Add more olive oil if needed. Drizzle with balsamic glaze just before serving.
6. Store in the fridge in a sealed container for up to 5 days.
Notes
Cook the tortellini al dente. This way, they won’t become too soft when mixed with the other ingredients and dressing.
Use high-quality fresh mozzarella to elevate the flavor of this salad.
Don’t overdress – a light drizzle of olive oil and balsamic glaze goes a long way.
Taste and adjust the seasonings as needed. Some balsamic glazes are sweeter than others.
