Ingredients
1 cup creamy peanut butter
3/4 cup packed light brown sugar
1/2 cup granulated sugar
1/2 cup (1 stick) unsalted butter, softened
1 large egg, room temperature
1 tsp vanilla extract
1.25 cups all-purpose flour
3/4 tsp baking soda
1/4 tsp salt
1 cup semi-sweet chocolate chips
Instructions
In a large bowl, cream together the peanut butter, brown sugar, granulated sugar, and softened butter until smooth.
Beat in the egg and vanilla extract until well combined.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the peanut butter mixture, mixing until just combined, then stir in the chocolate chips.
Cover the dough and refrigerate for 30 minutes.
Preheat your oven to 350 degrees Fahrenheit and prepare baking sheets with parchment paper.
Shape the dough into 1.5-inch balls, place them on the prepared baking sheets about 2 inches apart, and gently flatten them with a fork in a crisscross pattern.
Bake for 10 to 12 minutes until the edges are a light golden brown.
Let the cookies cool on the baking sheet for 5 minutes before moving them to a wire rack to cool completely.
Notes
Creamy peanut butter is key here for a smooth, consistent dough. Make sure it’s not a natural variety where the oil separates easily, as this can affect the texture.
Using packed light brown sugar adds a wonderful moisture and chewiness to the cookies, along with a lovely caramel note.
Softened unsalted butter helps create a creamy texture when mixed with the sugars and peanut butter. Make sure it’s softened, not melted, for the best results.
A room temperature large egg will incorporate more easily into the dough, creating a smoother, more cohesive mixture.
This provides the structure for our cookies. Measuring it correctly is important; spoon it into your measuring cup and level it off.
This leavening agent helps the cookies spread and achieve that perfect chewy texture.
A touch of salt balances the sweetness and enhances the peanut butter flavor beautifully.
