Description

Ingredients

• 3 ripe bananas, mashed (about 1.5 cups) • 1/3 cup unsalted butter, melted • 1/2 cup granulated sugar • 1/4 cup packed light brown sugar • 1 large egg, room temperature • 1 tsp vanilla extract • 1.5 cups all-purpose flour • 1 tsp baking soda • 1/2 tsp salt • 1/2 tsp ground cinnamon • 1 cup semi-sweet chocolate chips (plus 2 tbsp for topping)


Instructions

1. Prepare your oven to 350F (175C) and get your muffin tin ready with liners or a light greasing.
2. Combine the mashed bananas, melted butter, granulated sugar, brown sugar, egg, and vanilla extract in a large bowl until smooth.
3. In another bowl, whisk together the flour, baking soda, salt, and cinnamon.
4. Gently combine the dry ingredients with the wet banana mixture using a spatula, being careful not to overmix.
5. Stir in one cup of chocolate chips.
6. Spoon the batter into your prepared muffin cups, filling them evenly, and top each with the remaining two tablespoons of chocolate chips.
7. Bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs.
8. Let the muffins cool in the tin for about 5 minutes before moving them to a wire rack to finish cooling.

Notes

Don’t Overbake: Keep a close eye on your muffins during the last few minutes of baking. Overbaking is the quickest way to dry out any muffin. A few moist crumbs on your toothpick are your cue to pull them out.

Lining vs. Greasing: Using paper liners is the easiest way to remove muffins, but a good greasing with butter or baking spray also works well. Just make sure your muffin tin is properly prepared to prevent sticking.

Room Temperature Egg: Remember that room temperature egg? It really does make a difference in how smoothly the batter comes together, contributing to a better final texture. If you forget to take it out ahead of time, you can quickly warm it by placing it in a bowl of warm water for about 5-10 minutes.
