Ingredients
2 racks of beef back ribs (about 4 pounds total, absolutely NO pork)
For the Dry Rub:
2 tablespoons smoked paprika
2 tablespoons dark brown sugar
1 tablespoon kosher salt
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon freshly ground black pepper
1/2 teaspoon cayenne pepper
For the Glaze:
1.5 cups of your favorite high-quality BBQ sauce
Instructions
Preheat your oven to 275F (135C). Line a large baking sheet with two layers of heavy-duty aluminum foil, ensuring it’s long enough to completely wrap the ribs.
Remove the thin membrane from the bone side of the beef ribs by loosening it with a butter knife and pulling it off with a paper towel.
Combine the smoked paprika, brown sugar, salt, garlic powder, onion powder, black pepper, and cayenne pepper in a bowl.
Rub this spice mixture all over both sides of the beef ribs, pressing it into the meat.
Place the ribs meat-side up on the foil. Tightly seal the ribs by folding the foil over them and crimping the edges.
Bake the sealed ribs for 3 to 3.5 hours, or until the meat is very tender and pulling away from the bones.
Carefully open the foil packets, allowing steam to escape. Discard any excess liquid and fat.
Set your oven broiler to HIGH.
Brush the top of the ribs generously with your favorite BBQ sauce.
Place the ribs under the broiler, uncovered, for 3 to 5 minutes, watching closely until the sauce is bubbly, thick, and slightly charred.
Let the ribs rest for 10 minutes before cutting between the bones to serve.
Notes
The gentle, slow cooking process over several hours is what makes these ribs so tender. Resist the urge to increase the oven temperature, as this can lead to tougher meat.
The ribs are done when a fork inserted into the meat slides in easily with no resistance. The meat should also be pulling away from the bone.
Be generous with the BBQ sauce during the final cooking stage. You can even brush on a second coat about halfway through the uncovered baking time for an extra sticky glaze.
While it’s tempting to dive right in, allowing the ribs to rest for about 10–15 minutes after they come out of the oven can help the juices redistribute, making them even more tender and flavorful.
