Ingredients
1 medium onion, thinly sliced
¼ cup distilled white vinegar
2 tablespoons olive oil
1 tablespoon minced garlic
2 teaspoons salt
½ teaspoon black pepper
6 (6 ounce) lamb chops
Instructions
In a large resealable plastic bag, mix together the sliced onion, vinegar, olive oil, minced garlic, salt, and black pepper. Place the lamb chops inside, turning them to coat well in the marinade, then press out extra air, seal, and refrigerate for 2 hours.
Preheat your outdoor grill to medium-high heat.
Take the lamb out of the bag and discard the remaining marinade, but keep any sliced onions that stick directly to the chops. Wrap the exposed bone ends in small pieces of aluminum foil to prevent them from burning on the grill.
