Ingredients
1/2 cup granulated sugar
1/2 teaspoon kosher salt
2/3 cup cornmeal
1/3 cup all-purpose flour, plus two tablespoons
2 teaspoon baking powder
3 eggs, beaten
3/4 cup creamed corn
1 stick butter, melted
For honey butter glaze:
1 stick butter, melted
1/4 cup honey
Fresh chives, for garnish (optional)
Instructions
1. Preheat your oven to 375 degrees F and lightly grease a mini muffin pan.
2. In a bowl, whisk together the sugar, salt, cornmeal, flour, and baking powder. Set this aside.
3. Combine the beaten eggs, creamed corn, and melted butter in another bowl. Pour this wet mixture over the dry ingredients. Stir until just combined and there are no visible lumps of flour.
4. Using a small ice cream scoop, partially fill each mini muffin cup. Bake for 16 to 18 minutes.
5. For the glaze, combine the melted butter and honey in a small bowl. If you are using unsalted butter, add a tiny pinch of salt.
6. Once baked, remove the cornbread poppers from the muffin tray and place them on a wire rack. Brush generously with the prepared honey butter glaze.
Notes
Don’t Overmix: That little bit of lumpiness in your cornbread batter is a good thing! It means you haven’t developed the gluten too much, ensuring a tender result.
Grease Well: Mini muffin tins can be tricky. Be sure to grease each cup thoroughly, paying attention to the corners, or use liners to prevent sticking.
Watch for Doneness: Ovens can vary. Keep an eye on the poppers during the last few minutes of baking. A clean toothpick is your best indicator, but also look for that lovely golden-brown hue.
Serve Warm: These cornbread poppers are truly best when served warm, with that glistening honey butter still soft and fragrant.
