Ingredients
3.5 cups bread flour
2.25 tsp (1 packet) instant yeast
1.25 cups warm water (110°F)
1/4 cup extra virgin olive oil (plus extra for drizzling)
3 tbsp granulated sugar
1 tsp fine sea salt
2 cups seedless red or concord grapes
2 tbsp coarse turbinado sugar
1 tbsp fresh rosemary leaves
Instructions
Activate the yeast with warm water and sugar in a bowl until foamy.
Blend in the flour, olive oil, and salt to create a soft dough.
Knead the dough until smooth, then let it rise in a greased, covered bowl until doubled.
Coat a baking sheet with olive oil and press the dough evenly into the pan.
Create dimples in the dough, nestle grapes into them, and sprinkle with rosemary and turbinado sugar.
Allow the dough to rest for 20 minutes while the oven preheats.
Bake until golden brown and serve with a light drizzle of olive oil.
Notes
Check Your Yeast: If your yeast doesn’t get foamy after adding warm water and sugar, it might be old. Start again with fresh yeast to ensure a good rise.
Gentle Handling: Once the dough has risen, handle it gently when pressing it into the pan and dimpling it. This helps preserve the airy pockets created during fermentation.
Even Baking: For an evenly baked focaccia, try to spread the dough to the edges of your baking sheet. This ensures a consistent thickness.
Doneness Cue: The focaccia is ready when the top is golden brown, and a skewer inserted into the center comes out clean. The aroma will also be heavenly!
