Ingredients
1 cup Grits
1 ½ cup Coconut milk
1 ½ cup Peach nectar
1 tablespoon Butter
1 ½ cup Berries
2 tablespoon Maple syrup
Instructions
Pour coconut milk and peach nectar into a medium saucepan. Bring to a boil, then reduce heat to a simmer.
Add butter and grits, plus a pinch of salt. Stir well, cover, and let simmer for 15-20 minutes, stirring occasionally to prevent sticking.
While grits cook, prepare the berry topping. Heat a skillet over medium heat.
Add butter to the hot skillet, then saut the berries for 3-4 minutes.
Add maple syrup after about 2 minutes of cooking the berries and continue to cook until they form a syrupy consistency.
Serve the cooked grits in bowls. Spoon the berry mixture over the grits and mix them together.
Notes
Stir Often: Grits, especially stone ground ones, can be prone to sticking to the bottom of the pot. Regular stirring is your best friend for a smooth, creamy result.
Adjust Thickness: If your grits become too thick for your liking as they cook, feel free to add a little extra water or coconut milk, a tablespoon at a time, until you reach your preferred consistency.
Warm Your Coconut Milk: For an even creamier finish, you can gently warm your coconut milk before adding it to the grits, though this is an optional step.
Taste and Adjust: Always taste your grits before serving. You may want to add a touch more sugar or a pinch of salt to perfectly balance the sweetness of the peaches and berries.
