Ingredients
For the Mango Salsa
1/2 cup diced mango
1 tablespoon diced red onion
1 1/2 teaspoons diced jalapeño (1/2 tbsp = 1 1/2 tsp)
1 1/2 teaspoons chopped cilantro
Juice of 1/2 lime (about 1 tablespoon)
Chile lime seasoning or Tajín, to taste
For the Sweet Chili Shrimp
10 oz Argentine red shrimp (280 g ≈ 9.9 oz; about 15 shrimp)
Citrusy garlic seasoning, to taste
Black pepper, to taste
Avocado oil spray
1 tablespoon sweet chili sauce
For the Cilantro Lime Rice
1/2 cup cooked white rice
Chopped cilantro, to taste
Juice of 1/2 lime (about 1 tablespoon)
Salt, to taste
For the Avocado Crema
3 tablespoons mashed avocado (40 g = 2.8 tbsp, rounded)
Cilantro, to taste
2 small garlic cloves
1 tablespoon plain Skyr yogurt
Juice of 1/2 lime (about 1 tablespoon)
Salt and pepper, to taste
For the Cucumbers
1 mini cucumber, sliced
1 teaspoon rice vinegar
Sesame seeds, to taste
For Serving
1/2 cup shredded lettuce
Instructions
1. Combine diced mango, red onion, jalapeo, cilantro, lime juice, and chile lime seasoning for the mango salsa.
2. Season shrimp with citrusy garlic seasoning and black pepper. Cook in a skillet with avocado oil spray for about 2 minutes per side. Stir in sweet chili sauce.
3. Mix cilantro, lime juice, and salt into cooked white rice.
4. Blend avocado, cilantro, garlic, Skyr yogurt, lime juice, salt, and pepper for the avocado crema.
5. Toss sliced cucumber with rice vinegar and sesame seeds.
6. Assemble bowls with cilantro lime rice, sweet chili shrimp, shredded lettuce, mango salsa, cucumber, and avocado crema. Add extra sweet chili sauce if you like.
Notes
Don’t Overcook: Be careful not to overcook the shrimp. They cook very quickly and become rubbery if overdone.
Fresh is Best: Fresh cilantro adds the most flavor. If you can, use fresh cilantro instead of dried.
Prep Ahead: Dice your mango and bell pepper before you start cooking the shrimp to make the process quicker and easier.
Taste and Adjust: Taste the sweet chili sauce before adding it to the shrimp and adjust the amount according to your preference for spice and sweetness.
