Ingredients
1 cup yellow cornmeal
1 cup all-purpose flour
1/3 cup granulated sugar
1 tbsp baking powder
1/2 tsp salt
1 cup buttermilk
2 large eggs
1/2 cup (1 stick) unsalted butter, melted
1/3 cup honey (for hot honey glaze)
1.5 tbsp hot sauce or 1 tsp crushed red pepper flakes (for hot honey glaze)
1 tbsp melted butter (for hot honey glaze)
Instructions
Prepare your oven and baking pan by preheating to 400F (200C) and greasing an 8×8 inch pan or 8 inch cast iron skillet.
Combine the dry ingredients including cornmeal, flour, sugar, baking powder, and salt in a bowl.
In another bowl, whisk together the buttermilk, eggs, and 1/2 cup melted butter.
Gently combine the wet and dry ingredients until just mixed, then transfer the batter to your prepared pan.
Bake for 20 to 25 minutes, or until a toothpick inserted into the center emerges clean.
As the cornbread bakes, gently heat the honey, hot sauce, and 1 tablespoon of butter in a small saucepan for about 2 minutes.
Once baked, poke holes in the warm cornbread with a toothpick, drizzle the warm honey glaze all over, allow it to soak in for 5 minutes, and then cut into squares.
