Ingredients
8 bone-in, skin-on chicken thighs
1/4 cup pure maple syrup
3 tbsp Dijon mustard
2 tbsp extra virgin olive oil
2 cloves garlic, minced
1 tbsp fresh thyme leaves
1 tsp smoked paprika
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
1. Preheat oven to 400F (200C) and line a baking sheet with foil or parchment paper.
2. Pat chicken thighs dry with paper towels and season generously with salt and pepper.
3. Whisk together maple syrup, Dijon mustard, olive oil, garlic, thyme, and paprika in a small bowl until smooth.
4. Arrange chicken thighs skin-side up on the baking sheet and brush with half of the glaze.
5. Roast for 20 minutes.
6. Carefully remove the pan from the oven and brush the remaining glaze onto the chicken.
7. Continue roasting for another 15-20 minutes, or until skin is crispy and caramelized, and chicken reaches an internal temperature of 165F (74C).
8. Let chicken rest for 5 minutes before garnishing with fresh parsley.
