Ingredients
6 medium Granny Smith apples, washed, dried, and stems replaced with wooden craft sticks
1 cup granulated sugar
1/2 cup heavy cream
4 tbsp unsalted butter, cut into pieces
2 tbsp white miso paste
1 tsp vanilla extract
Flaky sea salt for sprinkling
Instructions
Prepare a baking sheet by lining it with parchment paper and a light coating of non-stick spray.
In a medium saucepan, melt granulated sugar over medium heat, stirring until it becomes a beautiful amber caramel.
Carefully incorporate the butter and heavy cream off the heat, stirring until smooth.
Whisk in the white miso paste and vanilla extract until the caramel is glossy and uniform.
Allow the caramel to cool slightly for about five minutes to achieve a thicker consistency.
Dip each apple into the warm caramel, ensuring full coverage, and place them on the prepared sheet. Sprinkle with flaky sea salt and chill for twenty minutes until set.
Notes
Make sure your apples are completely dry after washing. Any moisture can cause the caramel to slide off or prevent it from adhering properly.
While we’re letting it cool for a few minutes, don’t let it get too cool, or it will be too thick to dip smoothly. If it does thicken too much, you can gently warm it over low heat for a moment, stirring constantly.
Once your caramel is ready and slightly cooled, work efficiently to dip the apples. The caramel will continue to thicken as it cools.
The flaky sea salt isn’t just for show. It’s crucial for balancing the sweetness of the caramel and highlighting the umami from the miso.
