1 can (14.75 oz) cream-style corn
1 box (8.5 oz) corn muffin mix
1 cup sour cream
1/2 cup (1 stick) unsalted butter, melted
1.5 cups shredded sharp cheddar cheese
2 large eggs, beaten


Instructions

Prepare your oven to 350F (175C) and coat a 9×13-inch baking dish.

In a bowl, combine the beaten eggs, melted butter, and sour cream, whisking until smooth.

Gently mix in the drained whole kernel corn, cream-style corn, and corn muffin mix until just combined.

Stir in 1 cup of the shredded sharp cheddar cheese into the batter.

Transfer the corn mixture to the prepared baking dish, spreading it evenly.

Bake for 40 minutes, then top with the remaining 1/2 cup of cheddar cheese and bake for another 5-10 minutes until golden and set.

Notes

To ensure your corn casserole is perfectly baked, insert a knife or a toothpick into the center. It should come out mostly clean, and the edges should be slightly golden and set.

Overmixing can develop the gluten in the muffin mix, leading to a tougher casserole. Mix until just combined for the best texture.
