Strawberry Goat Cheese Bruschetta Recipe

  • Total Time: 30 minutes
  • Yield: 12 servings 1x

Description

This Strawberry Goat Cheese Bruschetta is a delightful appetizer that’s both simple to make and bursting with fresh flavors. The sweet strawberries pair beautifully with creamy goat cheese and a touch of balsamic glaze, all atop perfectly toasted baguette slices. It’s the perfect treat for your next get-together or a light, elegant meal.

Ingredients

Scale

½ cup balsamic vinegar
12 slices Italian bread
1 tablespoon olive oil
1 pound strawberries, washed and diced
2 teaspoons fresh thyme leaves, plus more for serving
1 cup goat cheese, room temperature
salt and freshly ground pepper to taste

Instructions

In a small skillet over medium-low heat, reduce the balsamic vinegar by half. Let it cool.

Prepare a grill for high heat.

Drizzle olive oil over the bread slices on a foil-lined baking sheet.

Mix the strawberries and thyme in a bowl.

Grill the bread until browned, about 3 minutes per side.

Spread the goat cheese on the toasted bread.

Mix the strawberry mixture with salt, pepper, and balsamic vinegar.

Spoon the strawberry mixture over the goat cheese on the bruschetta.

Garnish with additional thyme.

Notes

For the best flavor, use ripe strawberries.

Don’t overcrowd the baking sheet when toasting the baguette slices.

Toast the baguette until it’s golden brown and crispy, but watch carefully to prevent burning.

You can slice the strawberries ahead of time and store them in the refrigerator until ready to use.

Adjust the amount of goat cheese according to your preference.
