1/2 cup sour cream.

1/2 cup strawberry puree or strawberry jam.
23 drops pink food coloring (optional).
1 cup crushed golden Oreos or vanilla wafer cookies (for topping).
1/2 cup freeze-dried strawberries, crushed.
3 tbsp melted butter (for topping).

Instructions

1. Preheat your oven to 325F (163C). Prepare a 9-inch springform pan by greasing and lining it with parchment paper.

2. Combine the crushed cookies and melted butter. Press this mixture firmly into the base of your prepared pan. Bake for 8-10 minutes, then let it cool.

3. In a large bowl, beat the softened cream cheese and sugar until smooth. Add the eggs one by one, mixing well after each. Stir in the sour cream, vanilla extract, strawberry puree, and food coloring if you are using it.

4. Pour the filling over the cooled crust. Bake for 50-60 minutes until the center is set but still has a slight jiggle. Turn off the oven, leave the door ajar, and let the cheesecake remain inside for 1 hour.

5. Chill in the refrigerator for at least 4 hours or overnight.

6. Mix the crushed cookies, crushed freeze-dried strawberries, melted butter, and food coloring if you are using it until it looks like coarse crumbs.

7. Once the cheesecake is thoroughly chilled, sprinkle the strawberry crunch topping evenly over the top, pressing gently so it sticks.

8. Slice and enjoy your sweet, crunchy, and colorful cheesecake.
