This Spooky Black and Orange Mac and Cheese is a delightful twist on a classic comfort food, featuring a dramatic color contrast and a creamy, cheesy sauce that everyone will adore. It’s the perfect dish to get everyone in the festive spirit, whether for a Halloween party or just a fun weeknight meal.

Ingredients

Scale

1 lb black bean pasta or squid ink pasta (or regular elbow macaroni dyed with black food coloring)
4 tbsp unsalted butter
1/4 cup all-purpose flour
2.5 cups whole milk
2.5 cups sharp orange cheddar cheese, shredded
1/2 tsp paprika
Salt and black pepper to taste
Black olive slices or mini candy eyes for festive garnish

Instructions

Cook the black pasta according to package directions and drain.
Melt butter in a saucepan, whisk in flour, and cook for a minute.
Gradually whisk in milk and simmer until thickened.
Stir in cheese, paprika, salt, and pepper until melted and orange.
Fold the pasta into the sauce.
Serve warm, garnished with olives or candy eyes.

Notes

Be sure not to overcook your pasta. It should be cooked through but still have a pleasant texture. It will continue to soften slightly when mixed with the hot sauce.

If your cheese sauce seems a little too thick, you can loosen it up with a splash more milk. If it’s too thin, let it simmer gently for another minute or two while stirring.

Always stir the cheese into the sauce over low heat. High heat can cause the cheese to separate or become oily.

Taste your sauce before adding the pasta and adjust salt and pepper as needed. The sharpness of the cheddar can vary, so seasoning to your preference is important.
