Ingredients
8 eggs
2 tablespoons mayonnaise
1 tablespoon dijon mustard
1 ½ teaspoon chipotle sauce
Pinch of salt
4 grinds black pepper
Smoked paprika for dusting
2 teaspoons chopped chives
Instructions
1. Add water to a pot, enough to cover the eggs by 2 inches. Boil the water.
2. Add the eggs and boil for 12 minutes. Prepare an ice bath.
3. Remove eggs and place them in the ice bath for 10 minutes before peeling.
4. Peel and dry the eggs.
5. Slice the eggs, remove the yolks, and place yolks in a bowl.
6. Mash the yolks. Add mayonnaise, mustard, chipotle sauce, salt, and pepper. Mix until smooth.
7. Fill the egg whites and dust with smoked paprika and chives.
Notes
To make peeling easier, use older eggs, since they tend to peel more easily than fresh ones.
Overcooked eggs will have a green ring around the yolk. Monitor the cooking time in the boiling water carefully.
Mash the yolk mixture very well to achieve a smooth and creamy texture.
Store the filled eggs in an airtight container for up to 3 days in the refrigerator.
Use a piping bag to fill the egg whites for a more elegant look.
