Instructions

Gently simmer the apple cider in a saucepan until it reduces to 3/4 cup and then allow it to cool completely.

Preheat your oven to 350F (175C) and prepare a 10-cup Bundt pan by greasing it.

In a bowl, whisk together the all-purpose flour, baking powder, baking soda, 1.5 tsp cinnamon, nutmeg, and salt.

In a separate large bowl, cream the softened butter with the granulated sugar and brown sugar until light and fluffy, then gradually beat in the eggs one by one, followed by the vanilla extract.

Gradually incorporate the dry flour mixture and the cooled, reduced apple cider mixed with buttermilk into the wet ingredients, alternating until you have a smooth batter.

Pour the lovely batter into your prepared Bundt pan and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cake to cool in the pan for about 10 minutes before gently inverting it onto a wire rack.
