A deconstructed smash burger served in a bowl with crispy roasted potatoes, seasoned beef, melty cheese, and a tangy sauce. 4 medium russet potatoes (about 400g), cubed
500g lean ground beef (or ground turkey/chicken)
1 red onion, thinly sliced
100g grated cheddar cheese (or mozzarella)
1/2 cup mayonnaise
2 tbsp ketchup
1 tbsp Dijon mustard
1 tbsp finely chopped pickles (dill or sweet, drained)
1 tsp pickle juice
1/2 tsp garlic powder
1/2 tsp paprika
Salt and black pepper to taste
Handful of fresh iceberg lettuce, shredded
1 medium tomato, diced
1/2 cup gherkins (dill or sweet), halved
1 tbsp olive oil


Instructions

Preheat oven to 220°C (425°F) or 200°C (400°F) for fan-forced ovens

Spread cubed potatoes on baking sheets in a single layer; drizzle with olive oil and season with salt, black pepper, and paprika

Toss potatoes together, ensuring even coating

Bake for 40 minutes, stirring halfway for even crispiness

In a skillet over medium heat, cook red onion in olive oil until translucent

Cook beef until seared, browned, and no longer pink (8-10 minutes)

Mix mayonnaise, ketchup, Dijon mustard, chopped pickles, and pickle juice into a creamy sauce

Sprinkle cheese over the hot beef and let it melt (2-3 minutes)

Assemble the bowl by layering roasted potatoes, then cooked beef with melted cheese, followed by lettuce, tomatoes, red onion, and gherkin

Drizzle with burger sauce and serve immediately
