Ingredients
1.5 lbs boneless skinless chicken breasts
1 can (15 oz) black beans, rinsed and drained
1 can (15 oz) white navy beans, rinsed and drained
1 can (15 oz) corn, drained
1 can (10 oz) diced tomatoes with green chilies
1 cup chicken broth
1 packet (1 oz) taco seasoning
1 tsp cumin
8 oz cream cheese, softened
1/2 cup shredded cheddar cheese
Chopped cilantro and green onions for serving
Instructions
Arrange the chicken breasts in the bottom of your slow cooker.
Layer the black beans, white navy beans, corn, diced tomatoes with green chilies, and chicken broth on top of the chicken.
Sprinkle the taco seasoning and cumin over everything and gently stir the ingredients around.
Place the softened block of cream cheese directly on top of the mixture.
Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours.
Take out the chicken breasts, shred them with two forks, and return them to the slow cooker along with the melted cream cheese.
Stir the chili well until the cream cheese is fully incorporated into a luscious, creamy broth, then serve warm with cheddar cheese, cilantro, and green onions.
Notes
Ensuring your cream cheese is properly softened before adding it to the slow cooker is key to achieving a smooth, creamy texture without any lumps.
While slow cookers are forgiving, be mindful of the cooking times to prevent the chicken from becoming dry.
Using two forks is the easiest method for shredding chicken breasts. If the chicken is very tender, it might even fall apart with a gentle stir.
If you desire an even creamier chili, you can stir in a little extra cream cheese or a splash of heavy cream at the very end of cooking, just before serving.
Taste the chili before serving and adjust seasonings if needed, though the taco seasoning packet usually provides ample flavor.
