Slow Cooker Beef and Broccoli

Slow Cooker Beef and Broccoli

  • Total Time: 2 hours 15 minutes
  • Yield: 4 servings 1x

Description

A wholesome and nourishing slow cooker beef and broccoli recipe featuring succulent slices of flank steak coated in a savory, restaurant-style glaze.

Ingredients

Scale

1 1/2 pounds flank steak (cut across grain into thin slices)
1 cup low-sodium beef broth
1/4 cup low-sodium soy sauce
1/4 cup oyster sauce
1 tablespoon honey
1 tablespoon rice vinegar
2 teaspoons chili-garlic paste (or Sriracha, or 1/2 teaspoon red pepper flakes, plus additional to taste)
2 teaspoons minced garlic (about 2 large cloves)
2 tablespoons cornstarch
5 cups broccoli florets (about 2 small crowns)
Prepared brown rice (or quinoa for serving)
Chopped green onions (and toasted sesame seeds optional for serving)

Instructions

Lightly coat a 4-quart or larger slow cooker with nonstick spray and add the sliced beef.

In a separate bowl, combine the beef broth, soy sauce, oyster sauce, honey, rice vinegar, chili-garlic paste, and minced garlic. Pour this mixture over the beef in the slow cooker and stir to coat. Cover and cook on low for 1 1/2 hours.

In a small bowl, whisk together the cornstarch with 1/4 cup of water. Stir this slurry into the slow cooker.

Add the broccoli florets on top of the beef and sauce. Cover, switch the heat to high, and cook for an additional 30 minutes, or until the broccoli is tender.

Serve hot over brown rice, garnished with green onions and sesame seeds if desired.

Notes

Do not skip the cornstarch slurry. It is essential for transforming the thin cooking juices into a thick, restaurant-style glaze that clings to the beef and broccoli.

Keep the lid closed during the cooking process. Frequent lifting of the lid releases heat and extends the cooking time, so try to resist the urge to peek until the very end.

If your broccoli crowns are quite large, ensure you chop them into bite-sized florets so they cook evenly within the 30-minute window on high heat.
