Ingredients
6 bone-in skin-on chicken thighs
1.5 lbs baby Gold potatoes, halved
3 tbsp olive oil
4 cloves garlic, minced
1 tbsp Italian seasoning
1 tsp garlic powder
1 tsp smoked paprika
1/2 tsp onion powder
Salt and black pepper to taste
Lemon wedges and fresh parsley for serving
Instructions
Prepare your oven to 400F (200C) and lightly grease a large baking sheet. Ensure the chicken thighs are completely dry using paper towels. Combine the halved baby potatoes with half the olive oil, half the garlic, salt, pepper, and half the Italian seasoning, then arrange them on the baking sheet. In a separate small bowl, mix the remaining olive oil, garlic, Italian seasoning, garlic powder, smoked paprika, and onion powder to create a flavorful rub. Coat the chicken thighs thoroughly with this rub, making sure to get some under the skin, and place them among the potatoes on the pan. Bake for 35-40 minutes until the chicken skin is golden and crisp, and the potatoes are tender. Serve with fresh parsley and lemon wedges.
Notes
Using bone-in, skin-on chicken thighs ensures the most flavor and juicy results, with the skin becoming wonderfully crisp.
These small, waxy potatoes cook beautifully and absorb all the delicious flavors from the pan. Halving them helps them cook evenly with the chicken.
Extra virgin olive oil forms the base for both tossing the potatoes and creating the flavorful chicken rub.
Freshly minced garlic adds a wonderful aromatic depth that permeates the entire dish.
This herb blend provides a lovely Mediterranean flair, bringing together basil, oregano, thyme, and rosemary.
