1 tbsp fresh parsley, chopped
2 cloves garlic, minced
1 lemon, thinly sliced into rounds
Salt and black pepper to taste
Instructions
Get your oven ready to 400F (200C) and ready a baking sheet with parchment paper or foil.
Place your salmon fillets, skin down, onto the prepared baking sheet.
In a little bowl, mix together the olive oil, lemon juice, garlic, dill, parsley, salt, and pepper.
Spoon this lovely herb lemon mixture over each salmon fillet.
Add two thin lemon slices on top of every fillet.
Bake for about 12-15 minutes, until the salmon is nicely cooked and flakes apart with a fork.
Serve warm, perhaps with a few extra lemon slices.
Notes
Fresh Herbs are Key: While dried herbs can be used in a pinch, fresh dill and parsley truly elevate this dish with their vibrant aroma and flavor.
Doneness Test: The best way to check if your salmon is done is to gently press the thickest part with a fork. If it flakes easily, it’s ready.
Even Sizing: If your salmon fillets are of slightly different thicknesses, the thinner ones might cook a bit faster. You can always remove them a minute or two earlier if needed.
Baking Sheet Prep: Using parchment paper or foil not only prevents sticking but also makes cleanup a breeze, letting you focus on enjoying your meal.
