Ingredients
2 large, very ripe avocados (pitted and peeled)
1/2 cup high-quality unsweetened cocoa powder
1/2 cup pure maple syrup (or agave nectar)
1/3 cup unsweetened almond milk (or milk of choice)
1 teaspoon pure vanilla extract
1/4 teaspoon fine sea salt
For Serving:
Fresh raspberries or strawberries
Whipped cream (optional)
Chocolate shavings
Instructions
1. Halve the avocados, remove the pits, and scoop the soft flesh into a food processor or blender.
2. Add the cocoa powder, maple syrup, almond milk, vanilla extract, and salt to the processor.
3. Blend on high speed for about 1 minute. Scrape down the sides of the bowl, then blend again for 1 to 2 minutes until very smooth and thick. Add a tablespoon more almond milk if needed for blending.
4. Taste and add more maple syrup if desired, blending briefly to combine.
5. Divide the mousse among 4 small dessert glasses or ramekins.
6. Cover and refrigerate for at least 1 hour to chill and set.
7. Top with whipped cream, fresh berries, and chocolate shavings just before serving.
Notes
For the silkiest texture, be patient while blending. Blend for at least 1–2 minutes, stopping to scrape down the sides as needed, until you can no longer see any green from the avocado or brown from the cocoa powder.
Feel free to adjust the sweetener to your liking. Start with the recommended amount and add more gradually until it reaches your perfect sweetness level.
Pressing plastic wrap directly onto the surface of the mousse before chilling is a crucial step to prevent an undesirable skin from forming.
Don’t rush the chilling process. The 30 minutes (or longer) in the refrigerator allows the flavors to meld and the mousse to set to its ideal, velvety consistency.
