Ingredients
1 pound smoked beef or turkey sausage (kielbasa style), cut into 1/2-inch thick coins
2 large bell peppers (one red, one yellow), cored and cut into 1-inch strips
1 large red onion, halved and cut into thick wedges
2 cups baby potatoes, halved
3 tablespoons extra-virgin olive oil
2 teaspoons dried oregano
1 teaspoon garlic powder
1/2 teaspoon smoked paprika
1 teaspoon kosher salt
1/2 teaspoon black pepper
Fresh parsley, chopped (for garnish)
Instructions
1. Preheat your oven to 400F (200C). Line a large baking sheet with parchment paper or foil for easy cleanup.
2. In a large bowl, combine the sausage coins, bell pepper strips, red onion wedges, and halved baby potatoes.
3. Drizzle the olive oil over the combined ingredients.
4. Mix the oregano, garlic powder, smoked paprika, salt, and pepper in a small bowl. Sprinkle this spice blend over the sausage and vegetables.
5. Toss everything well to ensure the sausage and vegetables are evenly coated with the seasoned oil.
6. Pour the mixture onto the prepared baking sheet and spread it into a single layer. Use a second pan if needed to avoid overcrowding.
7. Bake for 15 minutes.
8. Take the pan out of the oven, toss the ingredients with a spatula, and return to the oven.
9. Bake for another 10 to 15 minutes, until the potatoes are tender, the vegetables have slightly caramelized edges, and the sausage is nicely browned.
10. Remove from the oven, sprinkle with fresh parsley, and serve immediately. This dish is wonderful on its own or in rolls.
Notes
Don’t Overcrowd the Pan: Giving your sausage and vegetables enough space on the baking sheet allows them to roast and caramelize properly, rather than steam. If needed, use two baking sheets.
Even Slicing: Try to slice your peppers and onions to a similar thickness. This ensures they cook evenly and are tender at the same time.
Check for Doneness: Sausage is cooked through when it reaches an internal temperature of 160 degrees Fahrenheit (71 degrees Celsius). Peppers should be tender with lovely browned edges.
Resting is Key: Allowing the dish to rest for a few minutes after coming out of the oven lets the juices redistribute, making the sausage even more flavorful and tender.
