Ingredients
½ pound ground beef
1 teaspoon garlic minced
1 Tablespoon chili powder
1 teaspoon salt
½ teaspoon pepper
½ teaspoon cumin
½ teaspoon onion powder
¼ teaspoon dried oregano
¼ teaspoon paprika
10 ounce can of Rotel (do not drain) (diced tomatoes with green chiles)
1 sheet puff pastry, thawed (usually comes in a package of two)
1 cup shredded Mexican blend cheese
Optional Garnishes: lettuce, tomatoes, sour cream, salsa, guacamole, green onions, cilantro, etc.
Instructions
Preheat the oven to 375F degrees.
Prepare a baking sheet with nonstick spray.
Brown the ground beef in a skillet over medium-high heat.
Drain excess grease.
Add garlic, chili powder, salt, pepper, cumin, onion powder, oregano, paprika, and undrained Rotel to the beef.
Mix well and cook for 3-4 minutes, then remove from heat.
Unroll the thawed puff pastry and roll it into a rectangle.
Spread the meat mixture evenly over the dough, then sprinkle with cheese.
Roll up the dough tightly, sealing the edge.
Cut the roll into one-inch slices.
Place the pinwheels on the prepared baking sheet.
Bake for 10-12 minutes, or until golden brown.
Serve hot, with desired garnishes.
Notes
Use room-temperature cream cheese to ensure it mixes smoothly with the taco seasoning.
Don’t overfill the tortillas, or the filling will spill out when you roll them.
Use a serrated knife to slice the pinwheels for clean cuts.
Adjust the baking time based on your oven; the edges should be lightly golden, and the cheese should be melted.
For best results, allow the pinwheels to cool slightly before serving so the filling can set.
