Ingredients
1 tbsp sesame oil (15ml)
1/4 cup gluten free soy sauce/tamari (60ml)
2 tbsp water (30ml)
2 tsp brown sugar
1 tbsp rice vinegar (15 ml)
1 tsp sesame seeds (optional)
1 tsp ground black pepper (or to taste)
1 tbsp cooking oil (15ml)
4 cloves garlic, minced
1 tbsp fresh ginger, peeled & minced
1/2 lb ground beef
1/2 small head of cabbage, thinly sliced
2 carrots, peeled and cut into matchsticks
4 spring onions, thinly sliced
Instructions
In a small bowl, whisk together the sesame oil, soy sauce, water, brown sugar, rice vinegar, black pepper, and sesame seeds if using. Set aside.
Heat cooking oil in a large skillet over medium-high heat. Add the minced garlic, ginger, and ground beef. Break up the beef with a spoon and cook until browned, about 5-7 minutes.
Add the carrots and cabbage to the skillet and cook for another 5 minutes until the vegetables are tender.
Stir in the spring onions and the prepared sauce mixture. Increase the heat to high. Stir everything together well so the beef and vegetables are evenly coated. Cook for about 3-4 minutes until the sauce thickens and is absorbed by the ingredients.
Taste and add salt and pepper if needed.
Remove from heat and serve immediately over rice or noodles, or with cauliflower rice or zucchini noodles for a low-carb option.
Notes
Hot Pan, Quick Cook: Ensure your skillet or wok is hot before adding ingredients. This helps to sear the beef and keep the vegetables crisp-tender.
Don’t Crowd the Pan: Cook the beef in a single layer. If your skillet is too crowded, the beef will steam instead of brown. Cook in batches if necessary.
Cabbage Texture: Stir-fry the cabbage until it reaches your desired tenderness. For a crunchier bite, cook for less time; for softer cabbage, cook a couple of minutes longer.
Fragrance Boost: Be mindful of the garlic and ginger. Cook them just until fragrant to avoid bitterness.
