2 large sweet potatoes, scrubbed clean (unpeeled)
2 tablespoons extra-virgin olive oil
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Fresh parsley for garnish (optional)


Instructions

Preheat your oven to 400F (200C) and line a baking sheet with parchment paper.

Clean the sweet potatoes well, leaving the skin on. Trim the ends, slice them in half lengthwise, and then cut each half into 3 to 4 wedges.

Place the sweet potato wedges into a large bowl.

Drizzle olive oil over the wedges.

Combine smoked paprika, garlic powder, onion powder, salt, and pepper in a small bowl.

Sprinkle the spice mix over the sweet potatoes. Toss them with your hands to coat evenly.

Arrange the wedges in a single layer on the prepared baking sheet, ensuring they don’t touch.

Bake for 15 minutes. Flip the wedges using tongs.

Bake for another 10 to 15 minutes until golden brown and tender.
