  • Total Time: 55 minutes
  • Yield: 4 servings 1x

Description

A delightful twist on a classic, this Roasted Cabbage Caesar Salad features caramelized cabbage, a creamy vegan Caesar dressing, and crunchy toppings for a simple yet incredibly flavorful dish.

Ingredients

Scale

1 head green cabbage, (sliced into 1-inch rounds)
1 tablespoon grapeseed oil ((or cooking oil of choice))
Salt and pepper
1/2 cup croutons
2 tablespoons capers
1 tablespoon hemp hearts ((optional))
1/2 cup silken tofu
1/4 cup nutritional yeast ((optional))
3 tablespoons apple cider vinegar
3 tablespoons extra virgin olive oil
1 tablespoon caper brine ((the liquid from jarred capers))
1 tablespoon chopped garlic ((about 3 cloves))
1 tablespoon chopped fresh chives ((optional))
Salt and pepper

Instructions

Preheat your oven to 400 F. Arrange cabbage rounds in a single layer on a baking sheet you’ve prepared. Drizzle the cabbage with oil and season with salt and pepper. Roast for 40 minutes, or until the cabbage is tender and nicely browned.

While the cabbage roasts, place the dressing ingredients in a blender and process for 30 seconds until smooth and creamy. If the dressing seems too thick, add 2 tablespoons of water and blend again. Adjust with more water, a little at a time, until it reaches your preferred consistency.

Move the roasted cabbage to a serving plate. Gently toss it with the dressing, then sprinkle with croutons, capers, and hemp hearts, if you’re using them.

Notes

Don’t overcrowd your baking sheet when roasting the cabbage. Giving the cabbage rounds enough space ensures they roast and caramelize properly instead of steaming.

Ensure your oven is fully preheated before the cabbage goes in. The hot oven is key to developing those delicious browned edges.

The roasting time can vary slightly depending on your oven and the thickness of your cabbage rounds. Check for tenderness with a fork. It should be easily pierced but still hold its shape.

The silken tofu can absorb liquid differently, so start with the recommended water amount for the dressing and add more only if needed. It’s easier to thin a dressing than to thicken it!

Don’t be shy with the salt and pepper on the cabbage before roasting, and always taste and adjust your dressing seasoning before serving.

The dressing can be made a day or two in advance and stored in an airtight container in the refrigerator. You may need to whisk in a little water to loosen it up before serving.

Roasted cabbage is best enjoyed fresh, as it can lose some of its tenderness and crisp edges upon reheating. However, you can roast it a few hours ahead and let it sit at room temperature before dressing.
