Ingredients
• 1 package (6 oz) cherry or raspberry gelatin powder
• 2 cups boiling water
• 1 cup cold water
• 1 can (20 oz) crushed pineapple in juice, drained (reserve juice for water measure)
• 1 can (15 oz) whole berry cranberry sauce
• 1/2 cup chopped walnuts or pecans
• 1 cup mini marshmallows
• 8 oz whipped topping (Cool Whip), thawed
Instructions
Completely dissolve the gelatin powder in the boiling water in a large bowl.
Add the cold water and chill for about 45 minutes until it reaches a soft gel consistency.
Carefully pour in the 2 cups of boiling water. Stir until the gelatin powder is completely dissolved, ensuring no granules remain.
Next, stir in the 1 cup of cold water.
Pop the bowl into the refrigerator for about 45 minutes. You’re looking for the mixture to thicken to a soft gel consistency, like unset pudding.
Once the gelatin has reached that soft gel stage, gently fold in the drained crushed pineapple, the whole berry cranberry sauce, your chopped nuts, and the mini marshmallows.
Pour this colorful mixture into your chosen 9×13 inch glass dish or a pretty gelatin mold.
Now comes the waiting game. Chill the salad in the refrigerator for at least 4 hours, or for the best, firmest set, let it chill overnight.
Just before you’re ready to serve, spread the thawed whipped topping evenly over the top of the set jello. Cut into squares and enjoy!
