Ingredients
4 cups seedless watermelon, cut into chunks and deeply chilled
1/4 cup fresh mint leaves, gently washed
Juice of 1 large lime (about 2 tablespoons)
1 tablespoon agave nectar or simple syrup (optional, depending on watermelon sweetness)
1 cup sparkling water or club soda, very cold
Ice cubes
Extra mint sprigs and lime slices for garnish
Instructions
Blend the chilled watermelon chunks in a blender until smooth.
Strain the blended watermelon through a sieve into a pitcher to remove pulp.
Add the mint leaves and lime juice to the pitcher.
Gently bruise the mint leaves in the pitcher to release their flavor.
Add sweetener if desired and stir.
Fill serving glasses with ice.
Pour the watermelon mixture into the glasses over the ice.
Top off the glasses with sparkling water.
Stir each glass gently.
Garnish with mint and lime, then serve immediately.
Notes
For the coldest possible drink without watering it down too much with ice, start with well-chilled watermelon cubes.
Watermelons vary greatly in sweetness. Always taste your mixture before adding any optional sweetener, and adjust to your liking.
While you can use pre-bottled lime juice in a pinch, fresh lime juice offers a brighter, more vibrant flavor that truly elevates this cooler.
If you’re a big fan of mint, feel free to add a few more leaves. If you prefer a subtler hint, start with less and add more if needed.
