Ingredients
4 larger ears fresh corn, shucked (yields about 4 cups, 20 oz corn kernels)
1 heaping cup halved grape tomatoes
1 cup diced English cucumber
1/3 cup diced red onion
2/3 cup crumbled feta cheese
3 Tbsp finely chopped fresh parsley
2 Tbsp finely chopped fresh basil
Dressing
1/4 cup olive oil
1 1/2 Tbsp red wine vinegar
1 Tbsp lemon juice
1 1/2 tsp honey
1/2 tsp minced garlic
1/2 tsp each salt and freshly ground black pepper
Instructions
1. Whisk together the olive oil, red wine vinegar, lemon juice, honey, garlic, salt, and pepper in a mixing bowl to make the dressing, then place it in the refrigerator while you prepare the salad.
2. Bring a large pot of water to a boil and prepare a large bowl of ice water nearby.
3. Once boiling, add the corn to the pot and cook for 2 to 3 minutes, depending on how crisp you prefer the kernels.
4. Move the corn to the ice water to cool for a few minutes, then drain it well.
5. Slice the kernels off the cobs and place them into a large serving bowl.
6. Toss in the grape tomatoes, English cucumber, red onion, crumbled feta, chopped parsley, and basil.
7. Whisk the dressing once more, pour it over the salad, and toss everything together to coat well. Season with extra salt if desired.
