3/4 cup granulated sugar
1/2 cup water


Instructions

1. Make a simple syrup by heating equal parts water and sugar in a small saucepan until the sugar dissolves, then let it cool completely.

2. Blend fresh or frozen raspberries with freshly squeezed lemon juice until very smooth.

3. Strain the raspberry mixture through a fine sieve to remove seeds, pressing firmly to get all the liquid.

4. Stir the cooled simple syrup into the smooth raspberry liquid.

5. Refrigerate the mixture for at least one hour until well chilled.

6. Churn the chilled mixture in an ice cream maker until it has a thick, slushy texture.

7. Freeze the sorbet in a sealed container for at least 4 hours until firm.

8. Alternatively, freeze the mixture in a shallow metal pan, scraping it with a fork every 45 minutes until solid.

Notes

For Smoother Sorbet: Don’t skip the step of straining the raspberry purée. Removing the seeds makes a significant difference in the final texture.
