Ingredients
5 cucumbers
1 red onion
1 cup apple cider vinegar
½ cup sugar, (more or less to taste)
1/2 cup water
1 teaspoon salt
Instructions
Thinly slice the cucumbers.
Cut the red onion into very thin slices.
Place the onions and cucumbers in a large bowl.
In a separate bowl, mix the apple cider vinegar, sugar, water, and salt until the sugar dissolves.
Pour the vinegar mixture over the cucumbers and onions. Stir until coated evenly.
Refrigerate for at least 20 minutes. Before serving, drain the liquid and place in a serving bowl.
Notes
Use a mandoline or a sharp knife to slice the cucumbers evenly for a uniform texture.
Adjust the amount of sugar to your liking, depending on how sweet you prefer the salad.
If you’re making the salad ahead of time, add the fresh dill just before serving to prevent it from wilting.
Taste and adjust the seasoning before serving, adding more salt or pepper as needed.
For an extra refreshing salad, chill the cucumbers before slicing them.
