Ingredients
Raspberry Filling
2 cups raspberries
1/2 cup sugar
1 tablespoon lemon juice
1 teaspoon cornstarch
Cream Cheese Mixture
8 ounce cream cheese, room temperature
1/4 cup sugar
1 large egg
1 tablespoon vanilla extract
Brown Sugar Honey Glaze
1/4 cup butter
1/4 cup brown sugar
2 tablespoon honey
Crumb Topping
1/4 cup all purpose flour
3 tablespoons butter, cold
3 tablespoons sugar
6 store-bought croissants
Instructions
Preheat your oven to 350F.
Raspberry Filling
Combine raspberries, 1/2 cup sugar, lemon juice, and cornstarch in a saucepan over medium heat.
Cook for 7 minutes, stirring and breaking down raspberries.
Continue cooking for 3 more minutes after raspberries have burst.
Let the filling cool.
Cream Cheese Filling
Beat room temperature cream cheese on medium speed for 2-3 minutes.
Add egg, sugar, and vanilla, and beat for another minute until smooth.
Crumb Topping
Mix flour, sugar, and butter in a small bowl.
Cut the butter into the dry ingredients until coarse crumbs form.
Assemble the Croissants
Cut an X into the top center of each croissant, creating a pocket without cutting all the way through.
Gently open the pocket.
Fill each croissant with 2 tablespoons of cream cheese mixture.
Top with a spoonful of raspberry filling.
Prepare Basting Mixture and Bake
Melt butter in a small bowl.
Stir in brown sugar and honey until combined.
Brush the bottom of each croissant with the brown sugar honey mixture. Place them on a baking sheet.
Brush the sides and tops of the croissants with the remaining mixture.
Sprinkle about a teaspoon of crumb topping over each.
Bake for 20-22 minutes, or until a toothpick inserted into the center comes out clean.
Remove from the baking sheet immediately and cool on a rack for 10 minutes before serving.

The key to beautiful puff pastry is to handle it as little as possible and ensure it’s well chilled. If your kitchen is very warm, you might want to pop the assembled croissants in the refrigerator for about 10 minutes before baking to ensure the pastry stays firm.
