Description
These Raspberry Chocolate Truffles offer a delightful balance of rich, decadent chocolate and the bright, tangy burst of raspberries, with a smooth, creamy center and a crisp chocolate shell.
Ingredients
2 cups semi-sweet chocolate chips
1/4 cup whipping cream
1 cup freeze-dried raspberries
1 cup chocolate chips
3 tbsp freeze-dried raspberries
Instructions
Put the chocolate chips and whipping cream in a bowl. Microwave in 30-second intervals, stirring after each, until the chocolate is smooth and melted.
Grind the freeze-dried raspberries into a fine powder. Stir the raspberry powder into the melted chocolate mixture.
Portion the truffle batter using a cookie scoop, then roll it into walnut-sized balls with your hands.
Melt the remaining chocolate chips until smooth.
Dip each truffle into the melted chocolate, then sprinkle with crushed raspberries.
Refrigerate the truffles until you are ready to serve them.
Notes
When microwaving chocolate, it’s crucial to do it in short intervals and stir frequently. This prevents the chocolate from scorching and ensures a silky smooth consistency.
For the best texture and color infusion, grind the freeze-dried raspberries until they are as fine as possible. This will allow them to fully integrate into the chocolate ganache.
When dipping the truffles, work efficiently. The melted chocolate can start to set quickly. If it thickens too much, you can gently re-warm it for a few seconds in the microwave.
Apply the crushed raspberries immediately after dipping. The wet chocolate coating will act like glue, helping the raspberry pieces adhere beautifully.
