2 tbsp. instant espresso coffee
2 tbsp. boiling water
2 tbsp. coconut sugar
1 tbsp. pumpkin puree
1 tbsp. collagen optional
dash of pumpkin pie spice


Instructions

1. Boil about one cup of water in a small saucepan to easily measure out two tablespoons.

2. While the water boils, place the instant espresso powder in a stand mixer fitted with a whisk attachment.

3. Pour two tablespoons of the boiling water over the espresso powder and add the coconut sugar, pumpkin puree, and collagen if you are using it.

4. Whip on high speed for 4-5 minutes until the mixture resembles whipped cream.

5. Prepare your glass or jar by filling it with milk and ice.

6. Spoon the whipped coffee mixture on top of the milk, add a sprinkle of pumpkin pie spice, stir gently, and enjoy your delicious drink.

Notes

Whipping Speed: For the best texture, use a high speed on your electric mixer. This is key to achieving that airy, cloud-like consistency.

Don’t Overmix: Once the mixture reaches stiff peaks, stop whipping. Overmixing can cause it to become too stiff and difficult to spoon.

Serving Immediately: This whipped coffee is best enjoyed right away when the topping is at its peak fluffiness and the contrast with the cold milk is most refreshing.
