The ultimate upgrade to a beloved childhood classic. By blending smooth, creamy peanut butter into a base of melted marshmallows and salted butter, these treats stay incredibly soft and tender for days with a deep, nutty flavor.
Ingredients
- 4 tbsp salted butter
- 10 oz bag mini marshmallows (approx. 5 cups)
- 1/2 cup creamy peanut butter
- 1/2 tsp vanilla extract
- 6 cups Rice Krispies cereal
Instructions
Melt: Melt salted butter in a large pot over low heat. Add mini marshmallows and creamy peanut butter.
Stir: Cook and stir constantly over low heat until marshmallows are completely melted and the mixture is uniform.
Fold: Remove from heat. Stir in vanilla, then gently fold in Rice Krispies cereal until every piece is coated.
Press: Transfer to a greased 9×9-inch pan. Gently pat into an even layer using a greased spatula (do not pack down tightly).
Set: Let sit at room temperature for 30–45 minutes until firm before slicing into squares.
Notes
The Gentle Touch: Do not pack the mixture down tightly into the pan. A light touch keeps the bars airy and soft rather than hard and dense.
Low Heat is Vital: Rushing with high heat overcooks the marshmallow sugars, causing the treats to become rubbery once cooled.
Peanut Butter Tip: Use standard creamy peanut butter (like Jif). Natural varieties can be too oily and may prevent the treats from setting properly.
