Peach Cobbler Granola Delight

  • Total Time: 1 hour
  • Yield: 8 servings 1x

Description

Peach Cobbler Granola Delight captures the cozy essence of peach cobbler in a delightful granola form, featuring crunchy granola clusters, sweet peaches, and warming spices.

Ingredients

Scale

6 tablespoons unsalted butter, melted
⅓ cup packed light brown sugar
⅓ cup peach preserves
½ teaspoon kosher salt
2 teaspoons pure vanilla extract
2 cups old-fashioned rolled oats
1 ½ cups pecans, chopped
8 dried peaches, finely chopped
½ cup white chocolate chips

Instructions

Preheat the oven to 325 degrees F and line a baking sheet with parchment paper.

In a saucepan, melt the butter, brown sugar, preserves, and salt over medium-low heat and whisk to combine.

Remove from heat and stir in the vanilla.

In a large bowl, combine the oats, pecans, and dried peaches. Pour the wet ingredients over the dry, mixing until evenly moistened.

Bake until golden brown.

Once cooled, break into chunks and sprinkle with white chocolate chips.

Store in a sealed container for up to two weeks. Enjoy as cereal, over yogurt, or by the handful.

Notes

Stirring is key: Be sure to stir the granola during baking to ensure even cooking and to prevent burning.

Watch the oven: Ovens vary, so keep an eye on the granola during the last 15 minutes of baking to prevent over-browning.

Use ripe but firm peaches: They’ll soften beautifully in the oven without turning to mush.

Cool completely: Cooling the granola completely will allow it to crisp up perfectly.

Storage: Store the cooled granola in an airtight container at room temperature to maintain its crispiness.
